Full Professor of Food Technology, Food Design and innovation at University of Bologna. From 2012 is Head of the Interdepartmental Centre for Agri-Food Industrial Research. Author of around 300 papers aon food preservation, processing and packaging and physical and rheological food properties;. Scientific responsible of several regional and national research projects and WP leader in EU projects (FAIR CA on Osmotic dehydration; KBBE: Heatox, Chance, Track-Fast, Rescape, Iseki Food 1-2-3-4.
