Folake Henshaw is a Professor of Food Technology, in the Department of Food Science and Technology, College of Food Science and Human Ecology, Federal University of Agriculture Abeokuta. She obtained her B.Sc from the University of Ife, Ile ife , Nigetia and M.Sc from the University of Strathclyde, Glasgow, Scotland and Ph.D in Food Technology from the University of Ibadan, Ibadan.Nigeria
She has over thirty years experience of teaching and research at the Federal University of Agriculture , Abeokuta Nigeria. She has also been a visiting Scientist to the University of Georgia, USA and University of Ghana, Legon, Accra, Ghana at various times. Folake Henshaw has authored several scholarly publications and her research outputs had made significant contributions in achieving processing technology upgrade and enhancement of quality and safety of traditional foods. Folake has served as Head of Department and Dean of College for several years. She is a passionate teacher, a painstaking researcher and an ardent promoter of capacity building and empowerment of women. She has served as Mentor for the African Women in Agricultural Research and Development (AWARD ), a fellowship Programme for bridging the gender gap of leadership in Agricultural Research and development.
She has in the last five years been engaged in consultancy on Food Safety Education and Training and is committed to increasing awareness and adoption of Food Safety practices by all stakeholders along the Food Chain, from farm to fork. She is the Coordinator in Nigeria of a West African capacity building programme on Food Safety in collaboration with the International Life Sciences Institute (ILSI ) and the University of Ghana , Food Safety Training Centre. She is also the Ambassador of Global Harmonization Initiative in Nigeria, an International Network of Scientists working to promote Gobal Food Safety.
Professor Henshaw is a Fellow of the Nigerian Institute of Food Science and Technology. (NIFST).
Folake is married to Offiong Henshaw and is a mother of four children
